Zucchini
Zucchini ( courgette in French) are a variety of vegetable marrow, a summer squash. They are tender and tasty when young, but most varieties are tasteless when large and overgrown. When buying zucchini, look for squash that is firm and heavy for its size. Do not wash until ready to use.? Peeling is not necessary and the skin is thin and very fragile. Mild bitterness in zucchini, like that in related species like cucumbers, may be result from environmental factors such as high temperature, low moisture, low soil nutrients, etc. The bitterness is caused by compounds called cucurbitacins. Cheezy Squash

8 med. yellow squash, sliced 1/2 bell pepper, chopped 1 small onion, chopped 1 cup shredded cheese Preheat oven to 350 degrees. Cook squash, pepper and onion in a saucepan with just enough water to cover. Cook until the squash is tender, about 10 – 15 minutes. Drain well and mix in cheese. Pour into a 2 qt. baking pan sprayed with non-stick spray and bake 15 minutes.

The original recipe called for the broccoli to be cooked. I decided to use it raw and let it cook in the oven. Reason – to keep it from being too mushy. The recipe didn’t call for the cheese nor corn, I added those and am glad I did. For changes, use chopped squash. This would also be good with a cup of cooked chicken added to the mix. When selecting yellow squash, look at the stem. If the stem is hard, dry, shriveled, or darkened, the squash is not fresh. To make use of thick asparagus stalks, peel the lower part p to the tender part with a vegetable peeler. Steaming fresh vegetables over boiling water preserves more vitamins than cooking in boiling water. And… remove the tops of carrots before refrigerating. The tops drain the carrots of moisture making them limp and dry.

When preparing vegetables for cooking, use a stiff vegetable brush to scrub rather than peel them. Peeling causes a loss of vitamins found in and just under the skin. For many vegetables, such as squash, peeling is not necessary. Sand and dirt can be removed by soaking them in warm salted water for 5 minutes.

It’s that time of the year so I thought I would share these hot chocolate recipes with you. Mayan Hot Chocolate Puree 2/3 cup mashed butternut squash and 1/2 cup milk in a food processor. Place in a saucepan with 2 cups of milk and 6 ounces of chocolate morsels. Heat until chocolate melts. Serves 2 Hot Malted Chocolate Combine 2 cups milk, 1/2 cup chocolate morsels, 2 heaping Tbl. malted milk powder

This recipe was sent to me by a friend and it’s wonderful. My NJ son-in-law loved it. This is a dish you won’t want to miss out on. The texture is light and almost pie like. While visiting my daughter she presented me with a new cooking task. A friend of hers grew what is called Italian Squash. I don’t believe I’ve ever seen anything quite like this. It measured 3 feet 2 inches long and was 3 1/4 inches around the thickest part. My task is to come up with a great tasting dish made from this “squash” that is almost as long as I am tall. I guess it’s time to go to the internet to do a little research. If any of you have ever cooked or eaten Italian Squash, please let me know how it was cooked and your opinion of it’s taste. In the picture above, I’ve placed a wine glass beside the squash for comparison.
