Not only are the recipes delicious, but also they are so very easy to follow and I love the stories that appear at the end of each recipe. One of the things that appealed to me was that Martha uses basic ingredients, the kind you would find in your store cupboard at home. There is no need for a trip to the high-class food stores to find some exotic ingredient for a special recipe that you know you will never use again. Yet the end result is just as delicious as anything you might have spent hours working over a hot stove for. Also Martha rounds off each recipe with a Tip. Watermelon and Blueberry Margarita!
To me the Memorial Day weekend marks the official start of summer!? I know, by the calendar we are still weeks away from the official start but I have always been a summer lover and it sure is stinking hot here already.? With all of the thought about summer and the long weekend I started thinking about drinks that I could serve over the weekend and I remembered one that I had made last year but could not for the life of me find the recipe for it again. Finally success!? It is a Bobby Flay recipe and it is a true summer time drink…beautiful juicy watermelon, ripe plump blueberries and fresh from your garden mint!? How could it get any better?? TEQUILA!!!! Watermelon and Blueberry Margarita (recipe by Bobby Flay) This makes enough for about 8 drinks… Ingredients 1/4 cup water 1/4 cup granulated sugar 8 cups diced seedless watermelon (1 pound) 1/4 cup fresh lime juice 1 3/4 cups blueberries 3/4 cup lightly packed fresh mint leaves, plus 8 sprigs for garnish 1 1/4 cups silver tequila Ice Directions In a small saucepan, bring the water to a simmer with the sugar and stir over moderate heat until the sugar is dissolved, about 1 minute; let the sugar syrup cool. In a blender, puree the watermelon until smooth. Set a fine-mesh strainer over a bowl and strain the watermelon juice, pressing gently on the solids to extract as much juice as possible. Discard the pulp. In a large pitcher, combine the sugar syrup with the lime juice, blueberries and mint leaves. Using a wooden spoon, lightly muddle the blueberries and mint. Add the watermelon juice and tequila. Refrigerate until chilled, about 2 hours. Pour the cocktail into tall ice-filled glasses. Garnish with the mint sprigs and serve.

Today I received an invitation from Dave to join a site called Foodierama .? Before making my decision I decided to check the site out.? This site has a little of everything for just about everyone.? You will find Veggie blogs, Asian Blogs, Indian Blogs, and the one I’m wanting to be selected for “Best Food Blogs.”? I saw recipes for Grapefruit Cream Pie (sounds interesting and tasty), Jelly Bean Cupcakes, Stir-fry Bok Choy and Butterscotch Bars.? Am I going to join this site, you bet!? This is a site that has a lot going for it and more to come.

Cherry Macaroons – Pulled
condensed milk coconut cherries 3 Ingredients! Now this is one that you can really make changes to. Instead of the cherries you can use – chocolate chips, butterscotch chips, chopped nuts, candied pineapple, the list goes as far as your taste. You could even use crushed peppermint, red and green and make really pretty Christmas macaroons. Instead of spraying my cookie sheet I use parchment paper. Using this I can slide the paper and cookies off the cookie sheet and start another batch. If you want a little color for special events and occasions drop a couple drops of food coloring into the milk. I like to make Christmas and Easter baskets for my food testers and this was one of the recipes I used last Easter. They are pretty and simple to make using common ingredients. But the recipe has been pulled and moved to the manuscript file for Think With Your Taste Buds – Desserts.

Rona_Shively Read Stir, Laugh, Repeat and then…Repeat! I pride myself in being a non-domestic type. Far be it from me to attempt cooking anything that requires the use of an actual stove. I was surprised at how inspired I was by Martha Cheves’s cookbook, Stir, Laugh, Repeat. As I read through the recipes, so many of them jumped out at me as things I might actually be able to cook. I especially liked the one for Hash Brown Potatoes Au Gratin. Cheves has put together a reader-friendly cooking guide that gives you not only the information you need to attempt something new, but the inspiration. A wonderful read and a necessary addition to your cookbook collection. Nice work!

So you all know by now that we are a pretty busy household right?? Between ice skating lessons, karate classes and BMX races and practices you must wonder how we do all of that stuff and still eat home cooked, real food meals, right?? This recipe for baked chicken fingers is one of my favorite go to recipes for a busy weeknight.? From start to finish it takes just 15 minutes for me to bread them and bake them and have them on the table for the kids.? Almost as fast as going to McDonald’s and getting the chicken nuggets and bringing them home for dinner… Baked Chicken Fingers Ingredients: 1 lb boneless skinless chicken breast halves 1 egg, beaten 1 cup AP Flour 1 teaspoon garlic powder 1/4 teaspoon kosher salt 1/4 teaspoon black pepper 2 cups Italian breadcrumbs Directions: Preheat oven to 400F Cut chicken breasts into thin strips, about one inch wide. Longer sections can be cut in half to have uniform pieces. Mix flour and seasonings (garlic, salt, and pepper) well in a bowl. Dip chicken pieces into flour mixture. then egg mixture, and then finally in the Italian breadcrumbs. Place on baking sheet sprayed with cooking spray. 6 Bake at for 9-11 minutes, until crispy on outside and lightly browned. ***The girls like these dipped in Ranch Dressing, ketchup, BBQ Sauce or even Honey Mustard. ****To have these ready in 15 minutes I have to cut the chicken into thin strips earlier in the day.? Another time saver is to bread them and refrigerate them until ready to use and then just plop them in a preheated oven.? See you can eat well even when as busy as we are!!!

Now and then I post a recipe on this site instead of Martha’s Kitchen Korner and Martha’s Recipes ? because this recipe will be going to Mary Kennedy, Author of Dead Air.? Mary sends goodie packages to a unit in Iraq.? And for the month of April she will be sending 20 lbs. in honor of Carolyn Hart’s 20th book Laughed ‘Til He Died.? Mary and Carolyn are calling their endeavor Hart to Heart and I for one think it’s a wonderful act of love.? So, here is my Granola recipe that you too can enjoy.? (If you would like to correspond with this unit, go to Facebook and type in Support the 389th Regiment.? I’m sure they would love to hear from you.? And while there, make sure you check out their pictures.) 4 1/2 cups old fashioned oats, uncooked 1/3 cup chopped nuts 1 cup coconut 2 tsp. cinnamon 1 tsp. allspice 1/4 tsp. salt 1/2 cup maple syrup 1/4 cup cranberry juice 1 pkg (6 oz.) cranberries & raisin mix Preheat oven to 350 degrees.? Combine oats, nuts, coconut, spices and salt in a large bowl.? In a small bowl whisk together the maple syrup and cranberry juice.? Pour over oat mixture and stir to coat thoroughly.? Spread in an even layer on a VERY LARGE baking dish or 2 large baking dishes (you want the layer to be as thin as possible.)? Bake 30-40 minutes or until golden brown, stirring 2-3 times during baking time.? Let cool and add raisins and cranberries.? You can change your granola by adding about 1/2 cup of chocolate chips while it’s still hot (that’s what I’ve done in the picture above).? You can mix in salted nuts for a salty/sweet taste.? Use orange or apple juice instead of cranberry.? Use yogurt covered raisins or instead of maple syrup use honey.
