Rice Fruit Salad

1/2 cup whipping cream 1/4 cup sugar 1 cup small marshmallows 1 can (8 oz) crushed pineapple, well drained 2 cups cooked rice, cold Whip cream, add sugar and beat until stiff. Add pineapple, marshmallows and cold rice. Fold lightly. Chill 3 hours. Serves 4-6 This can also be made with 1/2 cup applesauce instead of pineapple. When I use the applesauce I add cinnamon to taste. You can also add chopped nuts or raisins for added texture and taste. Or try the already flavored apple sauces for even more taste changes.

If you don’t like shrimp this can be made with chicken, pork or beef. If I change the meat, I still use the seafood seasoning in this dish. It gives a flavor to the rice that is simply wonderful. This dish has almonds which give it a little crunch but they can be omitted. This shrimp dish is easy to make and served with a salad and bread gives you a quick, delicious meal.

Pomegranate Refresher

This is another recipe that I’ve worked up for POM Wonderful 100% pomegranate juice. This drink can be made with or without alcohol and has such a refreshing taste that you can’t help but love it. 1/2 cup lemon-lime flavored soda 1/4 cup POM Wonderful 100% pomegranate juice 1 orange wedge In a glass mix soda and pomegranate juice. Garnish with orange wedge. Before drinking, squeeze juice from orange wedge into your drink. Delicious!
