Rice Tips

In some languages, the word for eat means to eat rice.? This is the most widely eaten grain in America and has been the culinary foundation for many of the world’s oldest cultures. It was first grown in the American Colonies in the late seventeenth century.? ? The two main classifications of rice is white and brown.? White is less nutritious, as much of the bran, fiber, nutrients and the rice germ has been removed.? White rice is quicker to prepare and has a rather bland flavor.? Brown rice has a nutty, rich flavor and requires longer cooking.? Brown rice retains most if its nutritional values , which includes a limited amount of protein, but the protein quality is excellent because of the high levels of amino acids .? Rice is loaded with carbohydrates and has nutrients such as B vitamins , iron, phosphorus and magnesium.? ? An easy way to enhance the flavor of rice is to cook it in an assortment of liquids such as stocks, juices and even wine.? Another easy flavor enhancer is to use different spices and herbs.? You can also add cup up fruits or vegetables such as carrots, celery, apples or pears as it cooks.? Or add flavor by adding nuts, dried fruits or chilies.

Never Burn Paulie Sauce Pan – Chefs Catalog

The Pauli Cookware Story Pauli Cookware began with a simple premise: with all of today’s advances in science and technology, there had to be a better way to prevent overcooking and burning when cooking sauces and chowders. With that idea in mind, The Perfect Sauce and Chowder Pot was born. Utilizing advanced kitchen science, and more than two years of research, development and testing, its high-end design begins with its thick, 1.2 mm outer layer of stainless steel. From there, alternating layers of steel and aluminum encase what may be the biggest advance in home cooking since the microwave – a hidden layer of silicon oil that ensures an even cooking temperature, every time. Hermetically sealed for 100% safety, this hidden layer distributes heat evenly, cooking the contents of the pot at a steady pace. The result? A sauce

How to get more Omega-3 in your diet

This question was presented to a cardiologist and this is his answer. According to a scientific statement published by the American Heart Association in its journal Circulation , members of the association’s nutrition committee concluded that “omega-3 fatty acids have been shown in epidemiological and clinical trials to reduce the incidence of cardiovascular disease.” And studies have shown that eating a diet rich in omega-3s can help lower triglycerides . The three major types of omega-3 fatty acids found in foods are alpha-linolenic acid (ALA), eicosapentaenoic acid (EPA), and docosahexaenoic acid (DHA). Once ingested, the

condensed milk coconut cherries 3 Ingredients! Now this is one that you can really make changes to. Instead of the cherries you can use – chocolate chips, butterscotch chips, chopped nuts, candied pineapple, the list goes as far as your taste. You could even use crushed peppermint, red and green and make really pretty Christmas macaroons. Instead of spraying my cookie sheet I use parchment paper. Using this I can slide the paper and cookies off the cookie sheet and start another batch. If you want a little color for special events and occasions drop a couple drops of food coloring into the milk. I like to make Christmas and Easter baskets for my food testers and this was one of the recipes I used last Easter. They are pretty and simple to make using common ingredients. But the recipe has been pulled and moved to the manuscript file for Think With Your Taste Buds – Desserts.

Rocky River Butterfly Blush

Today I had a book signing at Rocky River Vineyards in Midland, NC.? The book signing was part of a festival held twice a year (Spring and Fall) by the Vineyard. ? This was the first time I’ve had the pleasure of attending this Spring event and you can believe me, it won’t be my last.? The festival consisted of music, food and craft vendors and a wine tasting.? Yes, the wine tasting was extremely popular and I even stopped by before leaving.? I ended up with a bottle of their Butterfly Blush which is a sweet muscadine wine.? I had company coming for dinner and thought this would be perfect to serve with a new dish I planned on making that I ended up naming Italian Pot Pie.? Well, the new dish turned out delicious but I couldn’t believe the compliments I received on the wine.? I heard “This has to be one of the best wines I’ve ever had.”? “I’ve just found a new favorite wine.”? “Where did you find this delicious wine?”? And they were right!? This wine has a wonderful, slightly sweet taste of muscadines that blended beautifully with my dinner.? Rocky River Vineyards is located @ 11685 Reed Mine Rd., Midland, NC 28107.? If you are ever in the area, Rocky River Vineyard is well worth visiting and by going to their website you can also check out some of their other wines.?

Coffee Filters

This was sent to me by a friend and I had to share with everyone. Coffee filters …. Who knew! And you can buy 1,000 at the Dollar store for almost nothing even the large ones.. 1. Cover bowls or dishes when cooking in the microwave. Coffee filters make excellent covers. 2. Clean windows, mirrors, and chrome… Coffee filters are lint-free so they’ll leave windows sparkling. 3. Protect China by separating your good dishes with a coffee filter between each dish. 4. Filter broken cork from wine. If you break the cork when opening a wine bottle, filter the wine through a coffee filter. 5. Protect a cast-iron skillet. Place a coffee filter in the skillet to absorb moisture and prevent rust. 6. Apply shoe polish. Ball up a lint-free coffee filter. 7. Recycle frying oil. After frying, strain oil through a sieve lined with a coffee filter. 8. Weigh chopped foods. Place chopped ingredients in a coffee filter on a kitchen scale. 9. Hold tacos. Coffee filters make convenient wrappers for messy foods. 10. Stop the soil from leaking out of a plant pot. Line a plant pot with a coffee filter to prevent the soil from going through the drainage holes. 11. Prevent a Popsicle from dripping. Poke one or two holes as needed in a coffee filter. 12. Do you think we used expensive strips to wax eyebrows? Use strips of coffee filters.. 13. Put a few in a plate and put your fried bacon, French fries, chicken fingers, etc on them. It soaks out all the grease.. 14. Keep in the bathroom. They make great “razor nick fixers.” 15. As a sewing backing. Use a filter as an easy-to-tear backing for embroidering or appliquéing soft fabrics. 16. Put baking soda into a coffee filter and insert into shoes or a closet to absorb or prevent odors. 17. By now we all know about the devastation of Haiti right?? Can you imagine being here and not knowing if your loved ones are okay.? I felt like that for a brief hour on Tues night.? My sister was vacationing in Jamaica and at that point no one really new the extent of the 7.3 magnitude earthquake.? I ended up calling all over the place and finally got to her room and got an email from her saying that everything there was normal and it was business as usual. What a relief…for me.? That doesn’t help the 3 million people that are in Haiti right now and that desperately need our help.? If you can find it in your heart to donate even a little bit (yes, once again, every little bit helps) these are some of the legit organizations that are offering relief… * Text YELE to 501501 to contribute $5 to Yele Haiti . * Text HAITI to 90999 to contribute to the Red Cross . * Call Red Cross 1-800-435-7669 to make your donation to the Red Cross. * Paypal Donation through Hope for Haiti * Donate to Doctors Without Borders . * In Canada, donations can be made by text message to the Salvation Army’s Haiti Earthquake Disaster Relief relief fund . Donors can text the world “HAITI” to 45678 from any Rogers Wireless or Bell Mobility phone to contribute $5.00 to The Salvation Army. I know how lean finances are for ALL of us right now… but even a small donation will help. If you can’t donate money, donate some of your time and help spread the word to others on how they can help. Every little bit helps!

Mistakes While Cooking

At some point in time, if you cook enough, you will make mistakes. I want to share one of my most recent mistakes with you. I was in Walmart a few weeks ago and spotted some pretzels that had been dipped in caramel and rolled in nuts. Great idea! I bought my pretzels, not the really large ones that they had used but not the really small ones either. Sort of in-between. I picked up a bag of caramel chips, which I didn’t know were even on the market, and knew that I had chopped pecans and almonds in my freezer. While thinking about this I decided to pick up a couple of apples and work them into my recipe. So… I cut the apples into chunks, melted my chips, inserted a pretzel into each apple wedge, coated it with my caramel and rolled it in nuts. I also
