The original recipe was called Cinnamon Coffee Cake.? I decided to Think With My Taste Buds and change it up a bit.? I had 3 bananas that were ripe and needed to be used, I had some Ricotta cheese that needed to be used and for cinnamon type toppings I prefer brown sugar.? The recipe called for sour cream but I wanted to use up my ricotta which is dryer than sour cream but I thought that adding the bananas and 1/2 cup of water would make up for the moisture that would come from the sour cream.? Plus, I have used ricotta before in cakes and they have always come out moist.? And using the brown sugar instead of regular sugar in my topping worked out perfect.? For changes – add coconut, of course.? Change the spice from cinnamon to allspice, cloves, etc.? All-in-all, this came out perfect and I was able to use up some ingredients that may have gone bad before they were used.? Changes – change flavor by using different flavorings such as coconut, pineapple, almond, etc.? If using any of these, eliminate the lemon juice.? If you use flavorings in your icing, decrease the amount to 1/2 tsp. and add water to make up the difference.?

This recipe was found by my dear friend Lillian. It’s from a booklet, not date, by Wheeler District Beeline Fashions. I’ve googled the Fashion company and can find nothing so that doesn’t help with the actual date of this recipe. I’ve also googled “Oatmeal Pies.” I’ve found 3-4 but none are quite like this one. So, here is an oldie that is delicious! The pie comes out similar to a pecan pie but not quite but with a slight starchy thickness. The only thing I would add would be more coconut or add the pecans instead of the coconut. Watch for this wonderful pie to appear in Think With Your Taste Buds – Dessets.

This recipe came from my wonderful friend Lillian. When making this I found I had no M and M’s but I did have a package of chocolate coated walnuts and I also had some very finely chopped walnuts so I used these instead of the M and M’s and peanuts. Since the walnuts were finely chopped I cut the amount to 1/4 cup. I also used a spring form pan sprayed with non-stick spray instead of the angel food pan. This recipe has so many possibilities. You can throw in some coconut, use almonds (whole or slivers), use salted mixed nuts, add raisins or dried cranberries. Just use your imagination. This is a cake that is very kid friendly so make sure the kids help with this creation. Also, this is a recipe that I’ll be sending to Mary Kennedy, Author of Dead Air. Mary sends goodies to the troops each month and this “Popcorn Cake” should keep very well. This recipe has been pulled and added to the manuscript file for Think With Your Taste Buds – Desserts.

This recipe was sent to me by Lillian.? I used the variation for the Oatmeal-Date Chews and also added my favorite addition… coconut.? They are simple to make and turned out delicious.? I would make one other change when making these again.? I will decrease the dates to 1/2 cup instead of the full cup.? With the full cup they come our a little on the sweet side.? This is a cake recipe sent to me by my lovely friend Lillian with her blessings for making changes.? I’ll give you the original version and then my changes. Hawkeye Cake 1 Lemon Supreme cake mix (baked as per instructions on box) 1 can crushed pineapple, undrained (I used a 20 oz. can) 1/2 cup sugar 1 large (6 oz.) pkg vanilla pudding (prepared as diected on box) Dream Whip (or whipping cream) Cook pineapple and sugar.? Put small holes in the baked cake (a two tined fork does a good job).? Pour pineapple mixture over hot cake.? When cooled, cover with vanilla pudding.? Spread Dream Whip or whipped cream over the top.? Keeps well and can be frozen.? Refrigerate cake. Changes – You could use coconut cream pudding with a yellow cake mix or use some coconut in the batter of the cake.? Use Cool Whip instead of whipping cream or Dream Whip. Lillian is 100% correct in her statement to me “I know that you can find a million changes for this recipe.”? I made my changes using coconut pudding, coconut extract in the cake mix and by using coconut milk in the pudding.? Work with this recipe and make your own changes.? Windy Cookies – Pulled
I have a friend called Windy. He has been such a great help to me with my sites that I had to name a cookie after him. This recipe was originally called Cowboy Cookies. But I’ve simplified the recipe by making just a few changes. Windy says he’s the voice of a many so what better cookie than one that has all of the many great things such as coconut, chocolate, nuts and oats? Thank you Windy!
