Pizza Tortilla Rolls

This idea came to me after purchasing a package of frozen pizza rolls. I won’t mention the brand but I will say that the taste is great but the price I paid for just 3 is a little high. I knew there had to be a way to have something at least close to the same flavor but at a less expensive price. If you like thin crust pizza, you’ll like my Pizza Tortilla Rolls. These are simply made from tortillas, cheese, pepperoni and pizza sauce. I sprinkled the tortilla with cheese, added about 2 Tbl. pizza sauce down the middle of the cheese, made 2 rows of pepperoni down the center, carefully rolled them up and secured with tooth picks. Then I baked them in a 350 degree oven for about 10 minutes or until the cheese was melted and the sauce was hot. These are perfect for lunches, snacks and even super bowl parties. They are easy and you can make as many or as few as you like. You can also change the meat if you like to ground beef, sausage, ham, etc. Or use an Alfredo sauce and spinach.

Frying Boneless, Skinless Chicken Evenly

No matter what I do to boneless, skinless chicken there is always a side that is thinner than the other and that side, of course, cooks quicker. There is a solution to this problem. Position the breasts in the skillet so that the thin, tapered ends are on the edge where food tends to cook more slowly. In other words, away from the center of the pan. And when you turn your chicken, make sure to flip them from end to end so the thin side is still on the outer edge of the skillet. This works great with pork chops too.

Fun Sandwiches & Bread Bowls

I’m always looking for cute and tasty ways to make sandwiches. One of the best I’ve seen so far was made from hard rolls bought in the deli section of the grocery store. The tops were sliced off just above the center, the inside had been scoped out and filled with chicken salad. A leaf of lettuce was slightly pressed into the opening and the top was replaced. The top was held in place with toothpicks attached to olives and then stuck into the middle of the top giving it the look of a hat. These were cute and of course tasty. I personally like hard rolls with the outside crust being my favorite part so this fit my taste buds perfectly. Of course you can fill the insides with just about anything to make your sandwiches. This idea reminded me of the time I ate broccoli soup served in a bread bowl at a festival. I decided to give the hard rolls a try at being mini bowls for soup. Works great! Then I remembered having dip at parties served in bread bowls. You got it! They makes perfect individual dip bowls for parties. For individual bread bowls I use dips that are served warm. This is so easy to do and so pretty. In a large serving platter place a sterno or candle warming type dish in the center. Fill it with your dip. Place hard rolls that have had the tops cut off and the centers removed around the dish and simply let your guests serve themselves. Don’t forget to place small plates near by for them to place their mini bowls on. What to do with the centers? Grind it into bread crumbs.
