This is more than I want to put into one post so it will be posted in 3 parts.? Colors can have a profound effect on how you feel. OATMEAL PIE…As a small girl I can remember her (my grandmother) making an oatmeal pie and I thought it was the best ever…(kind like Pecan pie without the pecans). Buffalo Chicken Salad with Blue Cheese Dressing

I’m really trying to make it a habit to have more salads for dinner. So far, thanks to the last couple of recipes chosen for the Craving Ellie in my Belly group, I’ve been able to do that. For me the key to a salad is lots of flavor. I can’t feel like a rabbit when I’m eating salad. This week’s CEimB recipe is Buffalo Chicken Salad with Blue Cheese Dressing and was chosen by AJM of You Eat Now . It was really a nice weeknight recipe, the chicken cooks up quickly under the broiler and the salad dressing was whipped up in no time. We are big fans of buffalo chicken in our house so this was a great way to get our “hot wing” fix in a much healthier way. The recipe calls for simply tossing the uncooked chicken strips in your favorite hot sauce ( Frank’s is the way to go!). I decided to add another layer of flavor to the chicken by marinating it with some olive oil, salt, pepper, garlic and chili powders before adding the hot sauce. Also, since we like it really hot, I tossed the broiled chicken in more hot sauce before topping it on the salad. I wasn’t sure if it would be filling enough for my husband, but he seemed pretty satisfied and said it was great. Oh…and I thought the dressing was really yummy. I poured all the ingredients in a small mason jar and just gave it a few shakes…and voila, homemade blue cheese dressing. Buffalo Chicken Salad with Blue Cheese Dressing Recipe from Ellie Krieger, The Food You Crave 2 (8-ounce) boneless, skinless chicken breast halves 2 tablespoons cayenne pepper hot sauce (or other hot sauce), plus more to taste 2 teaspoons olive oil 2 hearts Romaine, cut into 1-inch strips (about 8 cups) 4 celery stalks, thinly sliced 2 carrots, coarsely grated 2 scallions, green part only, sliced 1/2 cup Blue Cheese Dressing

Marie’s Sunday Six Smile Makers

Happy Sabbath day to you all. It’s Sunday and time for my Sunday Six Smile Maker post again. Sundays seem to come around so very quickly, it’s hard to believe that here it is again, but there’s no denying it, along with Spring . . . Sunday has arrived! I am really looking forward to going to church today. I have not been for the last two weeks. Two weeks ago I had to dog watch at work, and last week we had company that didn’t want to go. We just could not leave them on their own for that space of time, as they were only with us for a few days, and so we stayed home. My spiritual battery is really in need of some charging! Today is “Mothering Sunday” over here in the UK as well, so it will be a really special service this morning. Happy Mother’s Day to all you UK’ers out there! Hope it’s the best one ever for each of you and chock full of new blessings and happy memories! Sunny Days. We had a lovely week full of sunny days and mildish weather! It has really caused everything in the garden to burst forth and all the trees and bushes are now covered in the green haze of budding leaves. The rhododendrons along the drive are all in bud and my tulips are getting ready to bloom! It’s just been a lovely week. I have always said you just cannot beat England on a sunny day! There truly is no lovelier place on earth . . . Having a day all to myself to do whatever I wanted and only that. Yesterday was the first day in a couple of weeks that I didn’t really have anything pressing that needed my attention! Imagine a whole day with no chores to take care of, or jobs that needed doing! Oh my, but I really enjoyed it from start to finish! I did a bit of baking, a bit of telly watching and a bit of painting and planning. I did have my lesson for the Young Women to plan, but that is always fun, so it’s not like a real chore to me. I even watched American Idol last evening. They had some country music singers on it which I really enjoyed, but I thought…
