Summertime…

It is summer in the northern hemisphere and I have really been enjoying it to the absolute fullest.? Eating, hanging out with friends (old and new) and family, traveling and eating some more.? I have picked out some pictures to highlight the first couple of days of our trip to Washington, DC and then to Pittsburgh before we headed to see family for the remaining 2+ weeks. Pastrami somewhere under all of the sides… Greek treats from one of the street vendors.? Delicious!!!! Hide-and-Seek Cupcakes

This is a recipe I found on a site called Grandparents.com.? I thought it was so good that I had to share it with everyone.?? Ingredients: 1 box cake mix 1 quart ice cream 1 container ready-made frosting Directions: 1. Prepare cupcakes as directed on the box. Let cool. 2. With a sharp knife, cut a hole in the center of each cupcake, leaving 1/4 inch of cake at the bottom, and scooping out cake to make a 1 to 1 1/2-inch diameter hole in the center of the cupcake. 3. Let ice cream soften, and with a tablespoon or melon baller, push ice cream down the center of the cupcake. Note: Work quickly! 4. Frost the top of the cupcake

Name This Dessert

I tried to take a nap and couldn’t get my mind shut down.? It was cooking and when it’s in that frame I usually come up with some pretty good recipes.? Today’s recipe is simple, with only 4 ingredients, but it needs a name.? Help me out by giving this a name so I can put it in my cookbook Think With Your Taste Buds – Desserts.? I’m running short on time, the manuscript goes to the publisher next week, so I need your name suggestions quickly.? OK, here is the recipe. Pretzels (thin stick or thin squares) Marshmallows White chocolate chips Coconut Preheat oven to 400 degrees.? Line your pan with non-stick foil or parchment paper or foil sprayed with non-stick spray.? Line your pretzels up to cover the bottom of your pan.? Cover the pretzels with marshmallows.? Bake until the marshmallows are puffed up and melted but not browned.? Take from the oven and sprinkle with white chocolate chips.? Sprinkle coconut over chips.? Turn the oven to broil.? Put pan back in the oven and let coconut slightly brown.? Cool completely.? Using a knife or pizza wheel, slice into squares.? I like using the large flake coconut which I buy at a health food store.? It’s unsweetened and so much better than shredded.? You can use milk chocolate but the salt from the pretzels and the sweetness of the white chocolate make them a perfect match.? I can’t give measurements because it all depends on the size of your pan.? I used a cookie sheet for making this and used about 4 large hands full of pretzel sticks, I used about 1 bag of large marshmallows, 1/2 cup of white chocolate chips and about 1/2 cup of coconut.? Now, name this and I’ll make sure your name will be included in the book for giving this a name.?

Great Review for Stir, Laugh, Repeat

Jewel of a Cookbook, December 30, 2009 By Cynthia Chappelle – See all my reviews Martha has written a jewel of a cookbook!! Great southern recipes! The recipes are easy to follow and the ingredients are easy to fine, most things you already have on hand. I love the helpful hints that are included. I have made several of the recipes and some of my favorites are the Cracker bars, Sugar Cookie Bars and the Outside-In Cake. I have received great response from everything I have made. My family exchanged food baskets this year and I included the recipes mentioned and everyone has enjoyed their treats. I also like the fact that you can change some of the ingredients like using milk chocolate in place of white chocolate without ruining the recipe. I can’t wait for the next book to come out!!

Simple Christmas Cookies and Candies

Christmas is a great time to spend time in the kitchen with your kids. It’s so simple them to make festive cookies and candies without turning on your oven. All it takes is a little melted white and milk chocolate, some decorative sprinkles and their imagination. The cookies in the picture are actually crackers that I found, shaped like butterflies. They are iced with white chocolate and sprinkled with red and green sugar. The marshmallows are covered in milk chocolate and rolled in sprinkles, almond slivers and stuck a pretzel in the center. You can ice just about any cookie, cracker or pretzel and come up with some inexpensive, pretty treats. These are perfect for the kids to give to their teachers for Christmas and the kids will take such pride when they tell them that they made them.

Orange Cycle Salad

As a kid I couldn’t get enough of those ice creams on a stick called Dream Cycles/Orange Cycles. The vanilla ice cream inside with the orange on the outside were so refreshing. This salad reminds me of those ice cream truck treats. The only thing I would change might be the nuts but even a change that small will can change this salad’s flavor. Caramel Marshmallows

This treat is one the kids will really love making and eating. You will need: large marshmallows Caramel Apple Dip lollipop sticks chopped nuts, sprinkles, mini chocolate chips, toasted coconut, etc. Top each lollipop stick with a marshmallow. Place the caramel dip in a microwave safe container and heat in the microwave for about 25 seconds. Stir. Let the kids dip their marshmallows into the caramel and then roll around in their choice of sprinkles, nuts, etc. This can also be done with melted chocolate. They also make nice holiday treats. If you use white chocolate as your cover you can roll them in colored coconut or sprinkles to match the season. If you have trouble finding lollipop sticks, use pretzel sticks.

Frozen Bananas with Chocolate

With summer on it’s way and kids out of school, here is a great snack to have ready when they come in from playing. Take bananas that are ripe and ready to eat, peel and freeze. After they are frozen dip them in melted chocolate and freeze again. They make a great treat!
