Banana Cinnamon Coffeecake

The original recipe was called Cinnamon Coffee Cake.? I decided to Think With My Taste Buds and change it up a bit.? I had 3 bananas that were ripe and needed to be used, I had some Ricotta cheese that needed to be used and for cinnamon type toppings I prefer brown sugar.? The recipe called for sour cream but I wanted to use up my ricotta which is dryer than sour cream but I thought that adding the bananas and 1/2 cup of water would make up for the moisture that would come from the sour cream.? Plus, I have used ricotta before in cakes and they have always come out moist.? And using the brown sugar instead of regular sugar in my topping worked out perfect.? For changes – add coconut, of course.? Change the spice from cinnamon to allspice, cloves, etc.? All-in-all, this came out perfect and I was able to use up some ingredients that may have gone bad before they were used.? To make simple deviled eggs put your egg yolks, mayo, mustard, salt, pepper, pickles, etc. into a zip lock type plastic bag. Mush it altogether inside, snip the corner of the bag and fill your egg white halves by mashing the filling through the hole cut into the bag. Did you know that cream that is whipped ahead of time, will not separate if you add a touch of dissolved unflavored gelatin (1/4 tsp. per cup of cream).? ? If you store your sour cream and cottage cheese upside down in your refrigerator it keeps longer.? For a new taste in potato salad dressing , use onion soup mix instead of fresh onions or chives.? Two Tablespoons are enough to season a family-sized salad.? It’s easy and saves the tears and fuss of chopping onions.

Simple Substitutions

SUBSTITUTIONS: 1 tablespoon cornstarch? = 2 tablespoons flour. 1 cup plus 2 Tbsp. cake flour = 1 cup all-purpose flour 1 teaspoon baking powder = 1/4 teaspoon baking soda plus 1/2 teaspoon cream of tartar. 1 cup whole milk = 1/2 cup evaporated milk plus 1/2 cup water. 1 cup sour milk = 1 cup? milk with 1 tablespoon vinegar or lemon juice added or use 1 cup ???? buttermilk. 1 cup sour cream,commercial? = 1/3 cup butter and 2/3 cup milk in any recipe calling for ? ?? sour milk. ??? 1 cup honey = 1 cup molasses. ?FOR ONE CUP OF: Broken graham crackers , you will need? 9 crackers. Graham cracker crumbs, you will need? 11 crackers. Broken saltine crackers , you will need? 7 crackers. Broken vanilla wafers , you will need? 22 wafers. Vanilla wafer crumbs , you will need? 26 wafers. FOR BAKING CAKES: If using a glass baking dish or a dark coated pan, lower the oven temperature by 25º. Don’t open the oven door to peek at your cake baking.? You will lose heat and could alter the baking time or the quality of the cake. To test when cake is done, poke a toothpick into the center and if it comes out clean, cake ???? is done; or lightly touch with finger and if it springs back, cake is done, or the cake starts ???? to pull away from the sides of the pan, it is done. ??? Cool the cake in the pan for 10 minutes before turning out on a wire rack to coo completely. ?? Loosen around the edges before turning onto rack. Cool completely before frosting, unless otherwise stated in recipe. A pastry brush is a wonderful tool to lightly brush away all crumbs before frosting. You can ??? also just lightly brush crumbs with your hands.

Baked Baked Potatoes

2 baking potatoes butter cheese sour cream bacon, cooked chives Preheat oven to 400 degrees.? I bake my potatoes in the microwave.? I wash them, punch holes in both ends and several going around the potatoes.? Put them on a paper plate.? Cover them with a very wet paper towel and microwave about 20 minutes, checking them after about 15 minutes.? After the potatoes are cooked, cut them into 4ths and place them in a baking dish sprayed with non stick spray.? Top with butter, sprinkle with cheese, dot with sour cream, add crumbled bacon, and add chives.? Bake until hot and cheese is melted. This idea started with a recipe I found using baked potatoes, topped with instant mashed potatoes, cheese and bacon.? I changed it to the above and it sure is good.

I made changes by decreasing the ground beef and adding the Italian sausage and pepperoni. I made this last weekend for a couple of friends for the 1st time. They loved it!
