This recipe is actually made from unbaked dinner rolls. I added apples, sugar, nuts and seasonings to make these delicious little rolls. But, I’ve pulled this recipe and sent it to the manuscript file for Think With Your Taste Buds – Desserts. Watch for it as well as other simple desserts later this year.

I made changes by decreasing the ground beef and adding the Italian sausage and pepperoni. I made this last weekend for a couple of friends for the 1st time. They loved it! As some of you know, on April 21, 2010 I’ll be a guest on WCNC’s show Charlotte Today.? I plan on making my Pina Colada Salad, found on page 129 of my cookbook Stir, Laugh, Repeat and I’ll also plan to demonstrate how simple Romaine Lettuce Wraps can be.? These wraps are great as appetizers.? If you want a change from that traditional salad at lunch, these are perfect.? You can even make them into a main dish.? It’s all a matter of being creative. The above are: Split carrots with cheese drizzled with Kraft Tuscan House Italian dressing & marinade Deli Ham rolls with Braswell’s Creamy Vidalia Onion dressing Wild Alaska Crab Delight drizzled with Louisiana Cocktail Sauce The 2 smaller wraps are the crab delight cut into pieces showing how they can be used as an appetizer.? Romaine lettuce makes the perfect lettuce wrap.? Due to the spine running down the leaf you have support for your filling while eating.? The leaves have the perfect width for wrapping and/or slicing.? I’ll be making a variety of these wraps for Easter, serving them as appetizers.? I plan on making those pictured above as well as adding tuna, egg salad and a several meats with cheese. Give these wraps a try and I bet you too will be saying? “These are so good, so simple, so attractive and so healthy”.?

This idea came to me after purchasing a package of frozen pizza rolls. I won’t mention the brand but I will say that the taste is great but the price I paid for just 3 is a little high. I knew there had to be a way to have something at least close to the same flavor but at a less expensive price. If you like thin crust pizza, you’ll like my Pizza Tortilla Rolls. These are simply made from tortillas, cheese, pepperoni and pizza sauce. I sprinkled the tortilla with cheese, added about 2 Tbl. pizza sauce down the middle of the cheese, made 2 rows of pepperoni down the center, carefully rolled them up and secured with tooth picks. Then I baked them in a 350 degree oven for about 10 minutes or until the cheese was melted and the sauce was hot. These are perfect for lunches, snacks and even super bowl parties. They are easy and you can make as many or as few as you like. You can also change the meat if you like to ground beef, sausage, ham, etc. Or use an Alfredo sauce and spinach.

There is a tip at the end of each recipes which I thought was a great addition. This book is a great addition to any cookbook library. I love love love it!!!

Apple Egg Rolls

4 large apples 1/4 cup firmly packed brown sugar 3 Tbl. butter 1 – 1 1/2 tsp. cinnamon 10 egg rolls small bowl with water Enough cooking oil to measure about 1 1/2″ – 2″ deep in a med. saucepan 1/2 cup powdered sugar Peel, core and dice apples. (I used Granny Smith) In a medium size sauce pan combine apples, sugar, butter and cinnamon. On med. high heat, cook apples until most of the liquid has cooked out. The liquid left should be slightly thick. On a piece of waxed paper, lay out one egg roll sheet at a time. Just in from the center of the roll, spoon 2 heaping tablespoons of apple mix. Don’t let the apples nor liquid go to any of the edges. Wet your fingers in the bowl of water and spread water around all edges of the roll. Fold one corner in and over the apples. Fold the 2 sides on the left and right over. Start bringing the other corner over keeping the apples tightly inside. Set aside and make the rest of your rolls. Heat oil on med. high. Place 2 – 3 rolls in the hot oil at a time turning once. Cook each side until lightly browned. Place on a paper towel to drain. I try to leave about 1 Tbl. of apple juice in the bottom of the bowl, add 1/2 cup of powdered sugar, mix well and drizzle over my Apple Egg Rolls. You can also just sprinkle with powdered sugar while hot. Changes – use recipes for other pie fillings

Sliders So many restaurants are offering “sliders” instead of full sized sandwiches and burgers. I’ve found them to be the perfect size for kids as well as myself. I even bought a “slider cooker” for hamburgers. But I have run across 1 problem when it comes to making my slider burgers… bread. I have a terrible time finding the perfect size rolls for my mini burgers. The burgers themselves are too small for most dinner rolls that I found in the deli ending up with a lot of bread with each bite. Finally I’ve found the solution. Hot dog buns ! One hot dog bun cut into thirds is the perfect size for slider burgers. They are also perfect for slider sandwiches. For my sandwiches I spray my “slider cooker” with non-stick spray, put the bottoms of my hot dog bun into each slot, add my cheese, top it with the hot dog top, put the cooker’s press top on and cook on low until the cheese melts. Perfect size slider sandwiches. So, if you’re into sliders, try using hot dog buns cut into thirds.
