GO GREEN Tips from Reynolds Wrap
With all of us trying to GO GREEN as much as possible, I thought you might find some of these tips from Reynolds Wrap useful.? I know I did. Using aluminum foil from recycled aluminum is an easy way to add a little “green” to your kitchen and make it more environmentally friendly. Here are some easy ways from purchase to clean-up that will minimize your impact on the environment. Today was an exciting day for myself and a few other North Carolina bloggers. We were all contacted Matrixx with an invitation to attend the grand opening for Charlotte’s newest store Save-A-Lot. Our hostess Laura Glaser flew all the way from Santa Monica, CA to meet with us at the opening and lunch afterwards. I have to say that I was impressed not only with the Save-A-Lot company but also the store itself. There are around 1,200 Save-A-Lot stores throughout the US. The company is committed to helping the consumer save money through their no-frill stores and low prices. Some people may say the stores are small, but I have to say they are just smaller than what most of us are accustomed to. From what I observed, I could walk into a Save-A-Lot with my shopping list and purchase everything listed. Plus, I would save money. While walking through the store I noticed my favorite laundry detergent Gain. I normally wait until it goes on sale somewhere close by and still hope that I have a coupon to help cut the cost. Save-A-Lot’s price on Gain was $4.99. I love to use Yukon potatoes for mashed potatoes. Save-A-Lot’s price for a 5 lb. bag was under $2.00, save for Russett. For you who have children, you know how expensive Capri Sun drinks pockets can be. Their price was under $2.00. I frequently take frozen dinners to work for my lunches. In most stores they range in price from $1.00 to around $4.00 each. When I looked at the prices of Save-A-Lot’s frozen dinners I noticed they were from $.25 to $1.50 less than what I normally pay. And the meats, you just have to see the prices to believe them. So if you are like me, always looking for the best buys, look for a Save-A-Lot near you. Pizza Tortilla Rolls

This idea came to me after purchasing a package of frozen pizza rolls. I won’t mention the brand but I will say that the taste is great but the price I paid for just 3 is a little high. I knew there had to be a way to have something at least close to the same flavor but at a less expensive price. If you like thin crust pizza, you’ll like my Pizza Tortilla Rolls. These are simply made from tortillas, cheese, pepperoni and pizza sauce. I sprinkled the tortilla with cheese, added about 2 Tbl. pizza sauce down the middle of the cheese, made 2 rows of pepperoni down the center, carefully rolled them up and secured with tooth picks. Then I baked them in a 350 degree oven for about 10 minutes or until the cheese was melted and the sauce was hot. These are perfect for lunches, snacks and even super bowl parties. They are easy and you can make as many or as few as you like. You can also change the meat if you like to ground beef, sausage, ham, etc. Or use an Alfredo sauce and spinach.

Our Cooking Light Virtual Supper Club chose to make something light for lunch for the month of September. If you are like me, a turkey sandwich just doesn’t always cut it in the lunch department. It’s nice to change things up a bit, for the sake of health as well as variety. Here’s what is on the lunch menu this month… Lemony Hummus with Spicy Whole-Wheat Pita Chips – Val of More than Burnt Toast Mozzarella Chicken Sandwich – Helene of La Cuisine d’Helene Lemony Orzo Salad – Aggie Vegetarian Minestrone – Shelby of The Life and Loves of Grumpy’s Honeybunch Chocolate Fudge Snack Cake – Jamie of Mom’s Cooking Club Doesn’t that all sound so good? Check out each member’s blog for links to the recipes and their own photos! (this recipe calls for feta…I didn’t have any on hand so I substituted grated Parmesan cheese…) I really enjoyed the Lemony Orzo Salad . I am a huge fan of orzo, it’s a rice shaped pasta and can be enjoyed in many types of dishes such as a pasta salad. I loved the simplicity of this dish…lots of chopped up vegetables paired with a whole grain (I used whole wheat orzo). You can easily add something like chickpeas or grilled chicken for protein to make it a balanced meal in itself. The lemon in the dressing brightened it all up! And since the recipe makes a nice size batch it will last you for a couple of lunches (or make a great dish for dinner!). For a printable copy of this recipe click here . Eliminating Lunch Box Odors With school starting back it’s time to start thinking about making lunches again. I can remember those cute little lunch boxes with the kid’s favorite characters on the outside. I can also remember the smell that sometimes goes along with making that sandwich, placing it in the lunch box and adding an apple or banana. By lunch time the whole meal has a really strange “combined” smell. And if the kids don’t eat everything you’ve packed and forget to throw away what they don’t eat, the smell can be even stronger. There is a solution to this little smelly problem. Sprinkle 1 tsp. of baking soda in the bottom of the lunch box and cover it with a paper towel. Just like in your refrigerator, the baking soda absorbs the odors.

I was meaning to post this recipe last Friday for Lent, but life got in the way and I had to wait until today to share these quesadillas. But Lent is still going on (it lasts 40 days, doesn’t it?) and you can try this meatless and healthy lunch this week. Even if you are not religious like me, you can still enjoy it. Remember that speedo/bikini season is around the corner in the northern hemisphere. You gotta get ready to show off your beautiful and lean body! Corn tortillas are a staple food in Mexico. Flour tortillas are not as common, only in the northern states, and whole-wheat tortillas are even less common. But for awhile I have been meaning to make my own. If I only knew they were so easy to make I would’ve started making them a long time ago. And what do you make with homemade whole-wheat tortillas? Healthy quesadillas, of course. When I made this dish for last month’s Royal Foodie Joust , a lot of my readers asked about the canned pumpkin blossoms I used for it. So I decided to head back to the Mexican market and buy another can to photograph. Surprisingly, I also found a can of cuitlacoche (corn smut, considered a delicacy in Mexico) and decided to make some very authentic Mexican quesadillas.
