These Lemon Bars can also be made with coconut.? If you want a little tartness you can use key lime juice instead of lemon.? Add raisins or nuts after pouring over crust.? You can also make up a glaze of 1/2 cup powdered sugar mixed with lemon juice.?? And of course if you don’t like nutmeg try allspice or cinnamon in the crust.? This is a really good recipe.? Simple and delicious.? But… it’s been sent to the manuscript file for my next cookbook Think With Your Taste Buds – Desserts.

Reading At The Beach: Reviews, January 21, 2010 By Vicki (Florida) I had a few reasons for wanting to read this book. I get tired of the same things over and over. I love trying new recipes. I love laughing. It has some of the strangest recipes I’ve ever seen. Here are a few: Mushroom Bread Sausage Cookies Meaty Mashed Potatoes Rabbit Food Sandwich Outside In Cake Stuffed Cube Steak Rolls Here are a few foods I love and can’t wait to try: Fried Pickles Southern Chow Chow Chinese Swiss Steak Hash Brown Omelets Key Lime Pie No Bake Cookies (My mom let me start making No Bake Cookies by myself when I was about 11 yrs. old and they are still my favorite to make…and eat!) There is a tip at the end of each recipes which I thought was a great addition. This book is a great addition to any cookbook library. I love love love it!!!

I worked on this recipe for about three months. I know my tasters were getting tired of it by the time I finally found the right combination. I made the Potato Soup and Mushroom Bread. I’d suggest that before you make the Mushroom Bread you put foil on the baking sheet. I didn’t and lived to tell about it because the cheese gets baked onto the sheet. This is however a bread that is delicious and scented up the entire kitchen. My husband accused me of eating it all. Well I had it for breakfast, lunch and dinner and he just had it for dinner. I’d make one suggestion for the recipe – toss the garlic with the mushrooms and olive oil. If you use a garlic press like I do it will be almost impossible to “sprinkle” garlic on the bread. The recipe I tried tonight was the Potato Soup. It is very easy to make and would be perfect as a first course to a dinner menu. It calls for six medium potatoes and I guessed correctly that this would be about 2 ¼ pounds unpeeled potatoes. The recipe calls for cheese so I assumed it was for cheddar cheese. Also I couldn’t find any canned Portobella mushrooms so I just used button mushrooms. There is no need to cook up bacon if you just use Bacon Bits. While the recipe calls for salt and pepper to taste I found that it needed 3 teaspoons of Lawry’s seasoning salt and lots of freshly ground pepper

Chocolate and Key Lime Cupcakes

I’ve been having a bit of a block lately.? I can’t write.? I’m still cooking and baking but nothing seems to be inspiring me to write (or “right” about it. LOL!!!).? I keep putting it down to the season.? I know it sounds weird to all of you northerners but here in Southwest Florida in the months of August and September we are a virtual dead zone of fresh produce!? It is just too stinking hot outside for anything to grow let alone thrive…I will be planting my garden this month so hopefully that will help give me a badly needed boost!? Until then I offer you some delicious chocolate and key lime cupcakes… Chocolate and Key Lime Cupcakes Ingredients: Cupcakes: 1 1/2 c. all-purpose flour 1 c. sugar 1/4 c. baking cocoa 1 tsp. baking soda 1/2 tsp. salt 1 c. water 1/3 c. vegetable oil 1 Tbs. white vinegar 1 tsp. vanilla Filling: 1 package (8 oz.) cream cheese, softened 1/3 c. sugar 1 egg 1/8 tsp. salt 1/4 cup of fresh squeezed key lime juice zest of one key lime Directions: In a bowl, beat cream cheese. Add key lime juice, zest, sugar, egg, salt. Mix well. Set aside. For cupcakes, combine flour, sugar, cocoa, baking soda, and salt. Add water, oil, vinegar, and vanilla. Mix well. Fill paper-lined muffin cups half full with batter. Top each with 2 Tbs. of cream cheese mixture and then top with more chocolate batter to cover the cream cheese. Bake at 350º for 25-30 minutes. Cool 10 minutes and remove from pan. This makes 12 These were truly delicious.? I tossed around whether it should be a white cupcake or chocolate but my helpers decided it HAD to be chocolate.? Glad I listened to them.? Some of them caved in but that’s because I was a little over zealous in my filling!!!
