Making Stock

Stocks are the basis for many of the soups consumed.? Although stocks do require a small amount of time to prepare, techniques and tips allow you to reduce cooking time while keeping flavors. ?By using pressure cookers you can have rich flavorful stock in as little as 20 minutes .? If time allows, simmering your beef, pork or chicken for longer periods will deepen the flavor and enhance the stock.? ? For healthy focus, preparation needs to include degreasing and defatting your stock.? This can be done by using a defatting cup which allows you to pour off the rich stock while leaving the fat behind.? These cups are available at most kitchen or gourmet shops.? During cooking you may also want to skim away any froth and fat that surfaces to the top of your liquid.? After simmering, you can remove even more by dragging a piece of paper towel over any pool of fat on the top of the stock.? After removing the stock from the heat, you can pass it through a colander lined with cheesecloth or paper towel to clarify the stock.? Or, let it cool in the refrigerator and simply spoon away the layer of that that has hardened on top of your stock.? ? Stocks store well in the refrigerator for up to one week.? It can be frozen in small containers or ice cube trays.? Once frozen, unmold cubes and store in freezer bags.? This will allow you to use the stock in many ways.? Ice cubes can be used to deglaze a sauté pan or to add flavor to a steaming or cooking liquid.? When reheating stock as with soups, you should always heat to the boiling point to ensure safety.

Ice Cream – There are 2 basic types of ice cream, plain which is made without eggs and French ice cream which uses whole eggs or egg yolks as a major ingredient.? Gelatin or egg white may be added to make sherbet smoother.? ? Sorbet – This is a French version of sherbet, made in the same way. ? Frappes – Similar to sherbet, but they have a softer texture.? Frappe may also refer to a combination of fruit or fruit puree, yogurt or milk, blended to form a thick beverage. ? Parfaits – Consist of ice cream alternately layered with topping in a tall glass.? The topping is based on a boiled syrup to which flavoring is added, often in the form of crushed fruit or nuts.? Parfaits should be frozen without being stirred. ?

Freezing Berries

Over the past few weeks the grocery stores have run sales on in-season berries.? I love using them when they are fresh and used to wish I had them during the winter months.? I’ve tried freezing them before by washing, placing them in bags and freezing.? They were ok but usually mushy when thawed.? Then I found the correct way to freeze berries so I can enjoy them year-round.? Gently wash your fresh berries (all but blueberries).? Pat them dry.? Arrange them in a single layer on a baking sheet and freeze until firm.? After they’re completely frozen, transfer them to freezer-weight resealable plastic bags and store up to 9 months.? When freezing blueberries, don’t wash them before freezing.? This will toughen their skins.? Wash your blueberries after they’ve thawed.

Pistachio Lace Cookies – Pulled

When I worked with this recipe I eliminated one step that appeared to make no difference in these cookies. The eliminated step called for the dough (which is about the consistency of thick cake batter) to be rolled in plastic wrap, frozen and sliced. By-passing this step has made no difference in the outcome of these cookies. For changes, use different nuts such as pecans or walnuts. Add a little cinnamon, nutmeg or allspice for flavor changes.? Coconut Wafer Cake – Pulled

This cake comes out moist and so good but it is rich. It can be made ahead and frozen. Place your cake in the freezer for a quick freeze. Cut in half and gently take out of baking dish. Wrap in parchment paper then place in a freezer bag. The parchment paper helps control the moisture. Hawkeye Cake

This is a cake recipe sent to me by my lovely friend Lillian with her blessings for making changes.? I’ll give you the original version and then my changes. Hawkeye Cake 1 Lemon Supreme cake mix (baked as per instructions on box) 1 can crushed pineapple, undrained (I used a 20 oz. can) 1/2 cup sugar 1 large (6 oz.) pkg vanilla pudding (prepared as diected on box) Dream Whip (or whipping cream) Cook pineapple and sugar.? Put small holes in the baked cake (a two tined fork does a good job).? Pour pineapple mixture over hot cake.? When cooled, cover with vanilla pudding.? Spread Dream Whip or whipped cream over the top.? Keeps well and can be frozen.? Refrigerate cake. Changes – You could use coconut cream pudding with a yellow cake mix or use some coconut in the batter of the cake.? Use Cool Whip instead of whipping cream or Dream Whip. Lillian is 100% correct in her statement to me “I know that you can find a million changes for this recipe.”? I made my changes using coconut pudding, coconut extract in the cake mix and by using coconut milk in the pudding.? Work with this recipe and make your own changes.?
