Banana Cinnamon Coffeecake

The original recipe was called Cinnamon Coffee Cake.? I decided to Think With My Taste Buds and change it up a bit.? I had 3 bananas that were ripe and needed to be used, I had some Ricotta cheese that needed to be used and for cinnamon type toppings I prefer brown sugar.? The recipe called for sour cream but I wanted to use up my ricotta which is dryer than sour cream but I thought that adding the bananas and 1/2 cup of water would make up for the moisture that would come from the sour cream.? Plus, I have used ricotta before in cakes and they have always come out moist.? And using the brown sugar instead of regular sugar in my topping worked out perfect.? For changes – add coconut, of course.? Change the spice from cinnamon to allspice, cloves, etc.? All-in-all, this came out perfect and I was able to use up some ingredients that may have gone bad before they were used.? Banana Nut Cake – Pulled

This cake is PERFECT as it is but if you find you must make a change or two you might add some spices such as allspice, nutmeg, cinnamon or a mix of your favorite flavors. You can use pecans or walnuts, I used pecans. You can make the cake in a 13 x 9 baking pan instead of a tube pan. Something else I like to do is apply half of the icing while the cake is still hot, poking holes in the cake allowing some of the icing to run inside. I then add the rest of the icing after the cake cools. If you make yours in a baking pan you can easily do this but remember to adjust your cooking time according to your pan. Pistachio Lace Cookies – Pulled

When I worked with this recipe I eliminated one step that appeared to make no difference in these cookies. The eliminated step called for the dough (which is about the consistency of thick cake batter) to be rolled in plastic wrap, frozen and sliced. By-passing this step has made no difference in the outcome of these cookies. For changes, use different nuts such as pecans or walnuts. Add a little cinnamon, nutmeg or allspice for flavor changes.? Apple Walnut Squares

This dish was sent to me by Lillian, my co-author for my cookbook Think With Your Taste Buds – Desserts.? Its simple to make, with a delicate taste of apple and cinnamon.? You have to love it. Lillian – This was given to me by a friend from a 1976 cookbook that she had. This looks as though it would be very moist and is so simple to put together. Changes may be to use English walnuts or pecans instead of black walnuts, add a bit of coconut, use apple pie spices instead of just the cinnamon. Martha – I made this dish and it is wonderfully moist! I did make a couple of changes. I found myself running short of flour so I used Cake Flour instead of all-purpose. I also used pecans instead of the black walnuts. For the apples, it takes about 5 small or 4 medium size and I used Granny Smith. This is one great dish to make. Caramel Apple Cake – Pulled

This is one that worked perfect on my 1st attempt and the only changes I would suggest would be to change the nuts. You could change the spice to cinnamon or apple pie spice and you might even add some raisins but I don’t think I would make too many other changes. It’s too good as it is.? All-Bran & Ice Cream

So many times we find ourselves wanting something that is totally unhealthy for us and no matter what kind of excuses we come up with we seem to give in.? Yesterday was one of those days for me.? I love ice cream but not the normal chocolate, vanilla or strawberry flavors.? It has to have a little something else added for my taste.? I buy flavors such as black walnut, butter pecan, snickers, strawberry cheesecake and heath.? If it has nuts and/or caramel as an ingredient, it has to be good.?
